Is there a catalog of LN (FP7) webservices documented anywhere describing the function of the service and details of what's needed to be called from the web?

In ttadv7500m000 you can look for those Business Objects that are in Studio. That should be a list of available BDE's. HOWEVER, when you look at the installed C4WS, and look at the BDE's to deploy, the list is much shorter.

IF you can Deploy it in C4WS, you can view the WSDL, or use soapui to import the WSDL and look at the simplified XML.
