How can I change the image showing the Infor logo when starting a session in LN?

The image is $BSE/tools/tt7.6_a/bttstp/bstpbwlogo.gif. You can replace that file, but be aware that it can be replaced again by the standard one when you apply a solution or a next version of the tools. Also note that such a change is not supported by Infor.

Nope, But the type of gif file may not be supported, try to convert it to another format.
